Winter Visit to Champagne
We took another trip to Champagne at the beginning of this 2024. It was very cold outside, but we had many great visits. Here, Bertrand Gautherot explains the different soil types of the Aube.

Antoine Chevalier's Carkonnia was on the wine menu at Restaurant Gastronome in Aarhus.
The skilled Sommelier, Alexander Nielsen, paired the wine with Chironfils Oyster on a bed of last years’ lacto-fermented white asparagus. The plate featured a delicate buttermilk and yoghurt foam on the side, topped with the richness of caviar and bronze fennel.
Antoine himself is an avid oyster enthusiast. If you're ever fortunate enough to visit him, it might be wise to bring a keg along!
